Ingredients

For the Salad:

  • 1 small head of cabbage, chopped (about 2 cups)
  • 3-4 baby cucumbers or 1 large English cucumber, finely chopped
  • 1/4 cup fresh chives, finely chopped
  • 1 avocado, cubed
  • 1/3 cup toasted pumpkin seeds

For the Green Goddess Dressing:

  • 1/2 cup Greek yogurt
  • 1 garlic clove
  • Juice of 1 lime
  • 1 tsp red wine vinegar
  • 2 tbsp olive oil
  • 1/2 avocado
  • Splash of water (if needed) 
  • Salt and pepper to taste

Fresh, crunchy, and packed with all the good-for-you greens! This Green Goddess Salad is a vibrant mix of crisp cabbage, cool cucumber, and creamy avocado, all tossed in a dreamy herb-packed dressing.

Instructions:

  1. Chop all salad ingredients and combine in a large bowl. Toss to mix everything together.

  2. Add all dressing ingredients to a blender and blend until smooth. If the dressing is too thick, add a splash of water until you reach your desired consistency.

  3. Pour the dressing over the salad and toss well to coat.

  4. Serve immediately with your favourite Protein Tortilla Chips for scooping—we love Sea Salt or Hint of Lime for this one!
