Ingredients

For the Cauliflower Bites

  • 1 bag SimplyProtein Hint of Habanero Tortilla Chips
  • 1 small cauliflower or 3 cups cauliflower florets
  • 3 large eggs, beaten
  •  1 tbsp water
  •  1 tsp hot sauce (like Frank’s Hot Sauce)
  •  1/2 cup grated Parmesan cheese
  •  1 tsp smoked paprika (or regular if you don’t have smoked)
  • ¼ tsp cayenne
  •  1 1/2 tsp sea salt, divided
  •  1 tsp fresh black pepper, divided

For the Blue Cheese Dip

  • 3/4 cup Greek yogurt
  •  1/3 cup mayonnaise
  •  1/2 cup crumbled blue cheese
  •  2 tbsp fresh lemon juice
  •  1 tbsp milk or water
  •  1 tsp lemon zest
  • 1 tsp hot sauce (like Frank’s Hot Sauce)
  • 2 tbsp finely chopped chives
  •  1/4 tsp fresh black pepper

For the Buffalo Sauce:

  • 1/2 cup salted butter
  • 1 cup hot sauce (like Frank’s Hot Sauce)
  • 2 tbsp light brown sugar

These Buffalo Cauliflower Bites bring all the protein, spice, and finger-licking satisfaction, minus the meat. Coated in SimplyProtein Hint of Habanero Tortilla Chips for an epic crunch and dunked in creamy, tangy blue cheese dip, they're so good that even meat lovers will be gobbling them down. Warning: they disappear fast.

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.

  2. Finely crush SimplyProtein Hint of Habanero Tortilla Chips in a food processor and transfer to a medium bowl. Add Parmesan, paprika, 1 tsp salt, and 3/4 tsp black pepper. Stir to combine and set aside.

  3. In another medium bowl, whisk together beaten eggs, water, hot sauce, 1/2 tsp salt, and 1/4 tsp black pepper.

  4. Cut cauliflower into large florets. Dip each floret in the egg mixture, then coat thoroughly in the crushed tortilla mixture. Arrange evenly on the prepared baking sheet.

  5. Bake for 20 to 30 minutes or until golden brown and crisp.

  6. Meanwhile, make the Buffalo sauce: melt butter in a small saucepan over medium heat. Whisk in hot sauce, brown sugar, and a pinch of salt. Let simmer for 5 minutes, then remove from heat.

  7. To prepare the blue cheese dip, combine Greek yogurt and mayonnaise in a medium bowl. Stir in blue cheese, lemon juice, milk, lemon zest, hot sauce, chives, and pepper until smooth.

  8. Serve the warm cauliflower bites with Buffalo sauce and blue cheese dip on the side.

Tip: The blue cheese dip can be made up to two days ahead and stored in an airtight container in the fridge.
