Mother's Day-Banana Oatmeal Pancakes

Happy early Mothers Day to all the Moms, Grandmothers, Sisters, Daughters and Friends!

What better way to spoil your loved one than a homemade brunch! Check out this recipe for a yummy way to start the day.  

This recipe delivers all the goodness of warm pancakes mixed with sweet banana and oats- what can be better?!

Banana Oatmeal Pancakes:

*makes approx. 16 pancakes.

Ingredients:

1 cup- oatmeal

1 cup- all-purpose flour

¼ cup- brown sugar

1 tsp- baking powder

1 tsp- baking soda

¼ tsp- salt

¼ tsp- nutmeg

1 ripe banana

2 eggs

1 cup- plain yogurt

½ cup- milk

½ tsp- vanilla

¼ cup- melted butter

Whisk together oatmeal, flour, sugar, baking powder, baking soda, salt and nutmeg. In another bowl, mash banana, then whisk in eggs and yogurt. Stir in milk and vanilla. Make a well in oatmeal mixture and pour in banana mixture and stir until blended together. Then stir in the butter!

With the mixture ready, coat a large frying pan with a little butter and set over low-medium heat. Use a ¼ cup of the mixture in each pancake, and cook until the batter bubbles, 2 to 3 minutes. Then flip and cook until golden brown on each side!

Top with some extra fresh banana, maple syrup and other fruits to take this meal to the next level!
